Before the sky turns peach, Panagiota is already in the kitchen. Flour clouds the air as she tests a new take on a childhood classic - chalva with citrus zest, or a fig tart laced with thyme. What she loves about Andronis, she says, is the opportunity to grow. To learn. To bring pieces of the island into every dessert. For Panagiota, patisserie isn’t just skill, it’s language. And today’s menu speaks of memory, invention, and sweet surprises.

Most people think bartenders are all about the nightlife. But Nikos will tell you, his favourite time is just before the first guests arrive. When the light hits the bar just right. When he lines up the glasses and prepares the condiments. “I work in a beautiful place and have a lovely home,” he says. It’s not about flash, it’s about flow. But for Oxana, it’s a kind of honour. To prepare a haven. To preserve beauty. To make someone else’s day begin with calm, without compromising on environmental consciousness.
